Blueberry Popovers

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1 teaspoon sugar 
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon Magnolia-Star Pure Vanilla Extract
  • 1 cup flour
  • powdered sugar for dusting

Directions:

1. Preheat oven to 450 degrees Fahrenheit.

2. Grease muffin or popover pan with butter or oil, then place on lowest rack position in oven.

3. Mix room temperature eggs, milk, melted butter, sugar, vanilla and salt together, then mix flour in all at once. Whisk until foamy.

4. Fill hot pan cups up 3/4 of the way, then add a few blueberries to each.

5. Move tray back into the oven for 25 minutes, then reduce to 325 for 10 more minutes.

6. Popovers are done when browned on top.

7. Allow to cool and remove from pan.

8. Dust with powdered sugar.
