Ingredients

Cupcakes

  • 1-1/3 cup all-purpose flour
  • 1-1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoon. Magnolia-Star Pure Vanilla Extract
  • 1/2 cup full fat sour cream
  • Green food coloring

Buttercream Frosting:

  • 1 cup unsalted butter- softened
  • 4 cups confectioners sugar
  • 1 tablespoon vanilla extract
  • 4-5 tablespoon milk

Decorations

Sprinkles

Edible glitter

Cupcake topper of choice (I used plastic gold coins)

 

INSTRUCTIONS

1. Preheat oven to 350 degrees.

2. In a mixer fitted with the paddle attachment add butter & sugar. Beat until fluffy.

3. Add sour cream, eggs and vanilla. Combine. Also add green food coloring until you reach desired color.

4. Add dry ingredients and mix until smooth.

5. Using a ice cream scoop fill cupcake liners 3/4 full

6. Bake 18-20 min

Icing instructions

 

1. Add butter and beat until fluffy

2. Add vanilla and milk

3. Add powdered sugar slowly one cup at a time until mixed well

4. Using a 1M icing tip fill piping bag with icing. Pipe each cupcake. Too with sprinkles, edible glitter and cupcake topper!
